We generalize the notion of purely infinite simple C*-algebra to the context of unital rings, and we include a large supply of examples that lie in this class. We state some basic properties of purely infinite simple rings, specially those related to its K-theory. Then we introduce some new techniques for constructing purely infinite simple (von Neumann) regular rings, obtaining some examples with universal properties. We also show that some known examples are particular cases of our construction, and we compute its K-theoretical invariants.
